5 Hearty Fall Soups

As soon as the temperatures start to drop, I start craving hearty fall soups. Perfect for chilly days and easy to whip up as an appetizer or an entree, the options are endless, and the leftovers are perfect for the day after. Here are a few fall soups I can't wait to try.


Curried Sweet Potato Soup // I actually ended up making this last night for dinner, and it was comforting, easy and delicious, which was exactly what I was looking for. It had a nice balance between spicy with a touch of sweetness and I liked the heartiness of the veggies for a cold, rainy evening.


Tuscan White Bean Soup //  I don't think I've ever made a white bean soup before, and the simplicity of this Italian recipe intrigued me, as well as the two different styles: creamy or chunky. Plus, with hints of bacon and sage (one of my newfound favourite herbs these days), it sounds like the perfect soul-warming comfort food.


Kale, Chickpea and Chicken Soup with Rosemary Croutons // I love tossing a bunch of kale or spinach into a broth-based soup for extra heartiness, and this recipe sold me on the mix of ingredients and the addition of homemade rosemary croutons.


Creamy Zucchini and Mushroom Soup with Fresh Thyme // Always a classic, cream of mushroom soup has got to be a longstanding childhood favourite, and though my mom definitely has the best recipe around, I've been wanting to try some other versions. I love the idea of adding zucchini, which will thicken the soup and add another flavour, and with the finishing touch of thyme, this sounds like the perfect rustic recipe.


Roasted Butternut Squash and Apple Brandy Soup // This wouldn't be a proper fall soup list without at least one butternut squash option (you can find another on this list), and the addition of apple brandy in this recipe had me sold. Creamy and rich and one of my all time favourite soups, I can't wait to experiment with this version. And if you haven't visit Local Milk before, you're welcome.
